It only takes one can of lentils and a few spices for you to get these delicious little spiced crunchy bits. They are fantastic as a salad topper or sprinkled over hummus. They are also good on their own and tend to mysteriously disappear when left in the cupboard.

Makes about 1.5 cups
Ingredients:
- 1 can lentils
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
Directions:
- Preheat oven to 375 degrees f
- Drain and rinse lentils
- Pat lentils dry with paper towels (no need to be too fussy here, just get the majority of the water out)
- Combine all ingredients in a bowl and stir together
- Spread out on a cookie sheet
- Roast for 25-30 minutes, stirring halfway through
Notes:
- These will last for at least a few days in a sealed container. They stay crunchier in the cupboard than in the fridge.
