Smoky and Savoury Roasted Lentils

It only takes one can of lentils and a few spices for you to get these delicious little spiced crunchy bits. They are fantastic as a salad topper or sprinkled over hummus. They are also good on their own and tend to mysteriously disappear when left in the cupboard.

Makes about 1.5 cups

Ingredients:

  • 1 can lentils
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin

Directions:

  1. Preheat oven to 375 degrees f
  2. Drain and rinse lentils
  3. Pat lentils dry with paper towels (no need to be too fussy here, just get the majority of the water out)
  4. Combine all ingredients in a bowl and stir together
  5. Spread out on a cookie sheet
  6. Roast for 25-30 minutes, stirring halfway through

Notes:

  • These will last for at least a few days in a sealed container. They stay crunchier in the cupboard than in the fridge.
