Breakfast Cookies

Cookies for breakfast? Yes please! You can actually feel pretty good about it this time though, they are about as close to a bowl of oatmeal as you can get without needing a spoon.

Makes about 16 cookies

Ingredients:

  • 1 cup oatmeal
  • 2 tbsp wheat germ
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 very ripe banana
  • 1 egg or one flax egg (see notes)
  • 1/2 tsp vanilla
  • 1/2 cup chocolate chips (I’m not a saint, if you are then you can leave these out)
  • 1/2 cup walnut pieces

Directions:

  1. Preheat oven to 350 degrees f
  2. Place oatmeal in the bowl of a food processor, process until broken up and forms a coarse flour
  3. Add wheat germ (2 tbsp), salt (1/2 tsp), and baking soda (1/2 tsp)
  4. Add banana to oats and process until a dough starts to come together
  5. Add egg or flax egg, salt (1/2 tsp) and vanilla (1/2 tsp) and mix in
  6. Stir in chocolate chips (1/2 cup) and walnut pieces (1/2 cup)
  7. Roll into balls a bit smaller than a golf ball, lightly press with a fork
  8. Bake 8-10 minutes until edges turn golden

Notes:

  • Depending on how ripe your banana is, you may want to add a couple of tablespoons of brown sugar. If the banana is yellow and starting to freckle the sugar will help, if the banana has turned all the way black then it will be sweet enough
  • Flax eggs are very easy – just combine 1 tbsp ground flax seeds with 2 tbsp water and set aside for 5 minutes until the mixture starts to thicken
