Easy Chocolate Cake

This cake practically makes itself, but no one needs to know that. They don’t need to know that it only requires one bowl, or that you can prepare it in a flash. They also don’t need to know if you happened to make a little bit more cake than you served, just saying…

Makes 1 9″ cake or 2 6″ cakes

Ingredients:

  • 1 cup AP flour
  • 1 cup white sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup canola oil
  • 1/2 cup plain unsweetened Greek yogurt
  • 1/2 cup water (or coffee, if the mood takes you there)
  • 1 egg
  • 1 tsp white vinegar (see notes)
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees f
  2. Grease cake pan(s) or line with parchment (or both)
  3. In a mixing bowl (or stand mixer) stir together flour (1 cup), sugar (1 cup), cocoa (1/2 cup), baking soda (1 tsp) and salt (1 tsp)
  4. Add canola oil (1/2 cup), yogurt (1/2 cup), water (1/2 cup), egg, vinegar (1 tsp), and vanilla (1 tsp)
  5. Mix together until everything is fully combined (don’t overmix)
  6. Pour batter into prepared pan(s) and bake for 25-30 minutes, until a toothpick inserted in the middle of the cake comes out clean
  7. Let cool at least 10 minutes before removing from pan(s)

Notes:

  • That isn’t a typo, I really do want you to add vinegar to the cake. Do you remember as a kid making volcanos out of baking soda and vinegar? Same idea here, all those bubbles will help the cake rise. Don’t worry, the cake won’t taste vinegary, if anything it just brings out the chocolate flavour a bit.
