Flaxseed Chocolate Chip Cookies

There are plenty of reasons to eat more flaxseeds. According to people who know about these things they are really good for you… seriously, look it up! (Don’t take health advice from me, I’m the person tempting you to eat chocolate chip cookies.) What I will tell you is that these are not your usual health-food substitution, these are shockingly delicious with crisp edges and chewy middles, and the flaxseeds given them a toasty flavour. What else could you need?

Makes: About 2 dozen cookies

Ingredients:

  • 1 tablespoon ground flaxseeds
  • 3 tablespoons water
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar (or just under 1/2 cup white sugar and 1 teaspoon molasses)
  • 1 teaspoon vanilla
  • 1 cup AP flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips (or 1/3 cup mini chocolate chips)

Directions:

  1. Combine flaxseeds (1 tbsp) and water (3 tbsp)
  2. Cream together butter (1/2 cup), white sugar (1/2 cup) and brown sugar (1/2 cup) or white sugar and molasses
  3. Add flaxseed mixture and vanilla (1 tsp)
  4. In a medium bowl stir together flour (1 cup), salt (1/2 tsp) and baking soda)
  5. Add dry ingredients to wet ones and mix just to combine
  6. Add chocolate chips (1/2 cup)
  7. Refrigerate at least 1/2 hour (to help stop these from spreading out into one giant cookie)
  8. Preheat oven to 375 degrees f
  9. Roll into small (golf ball) sizes balls
  10. Bake 8-10 minutes
