These are savoury, a little bit spicy, a little bit saucy, vegetarian (and vegan) friendly, and just make a perfect dinner.
They are also beyond stubborn when it comes time to take them out of the pan. It took an embarrassing number of attempts to get one out that looked even remotely good enough to photograph. That said, even if they come out in a messy heap, these are still delicious, just call them “rustic”.

Makes: 6 wraps
Ingredients:
Wraps
- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1 small onion, chopped
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 can black beans (no salt added), drained and rinsed
- 1 package extra firm tofu
- Salt and pepper to taste
- 6 flour tortillas
Sauce
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, crushed
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1/2 cup tomato sauce
- 2 tbsp tomato paste
- 2 cups vegetable broth (no salt added)

Directions:
- Roast sweet potatoes
- Preheat oven to 375 degrees f
- Stab sweet potatoes several times with a fork (please be careful here – this is very satisfying but no one likes a fork through the hand)
- Place on a baking sheet and roast for about 30-40 minutes, until sweet potatoes are fork-tender
- Set aside to cool
- Prepare rest of filling
- Heat olive oil (1 tbsp) in a very large pot
- Add onion (1) and sauté over medium heat until translucent
- Add smoked paprika (1 tsp) and cumin (1 tsp) and sauté for about 30 seconds, stirring constantly
- Turn off heat and add black beans and tofu
- Scoop out the flesh of the roasted sweet potatoes and add to the mixture
- Stir well to thoroughly coat the tofu with the spices
- Make sauce
- Heat olive oil (1 tbsp) in a medium pot
- Add onion (1) and sauté over medium heat until translucent
- Add garlic (3 cloves), chili powder (2 tsp), cumin (1 tsp) and oregano (1 tsp) and cook for 30 seconds to 1 minute
- Add tomato sauce (1/2 cup), tomato paste (2 tbsp) and vegetable broth (2 cups)
- Simmer for about 10 minutes, until slightly thickens
- Remove from heat and set aside
- Assemble and bake
- Preheat oven to 375 degrees f
- Place 1/6 of filling in each of 6 tortillas, wrap in whatever shape you like and arrange in a baking dish
- Pour sauce evenly over wraps
- Bake for about 30-40 minutes, until the edges start to crip
Notes:
- Serve these with salsa, avocado, lime juice or any combination of those things!
- These make really good leftovers, but I suggest reheating them in the oven, they can get a bit soft in the microwave.
