Maple Soy Roasted Chickpeas

Today’s post is a quick one, but I had to tell you about these shockingly delicious roasted chickpeas. I know, that is a big ask of chickpeas, but please trust me, you will be amazed at how good these are.

These are incredibly easy to make. The only down-side is that they need to marinate for a long time, so you can’t have them right now. However, start now and tomorrow’s you will appreciate it.

Makes about 1 cup

Ingredients:

  • 1 can no salt added chickpeas, drained and rinsed
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 1/2 tsp liquid smoke
  • 1 tsp tomato paste
  • 1 tsp olive oil
  • 1/4 tsp salt (optional)

Directions:

  1. Combine all ingredients in a bowl
  2. Let sit overnight in the fridge
  3. When ready to cook, preheat oven to 400 degrees f
  4. Drain chickpeas and spread them evenly across a cookie sheet
  5. Bake 18-20 minutes, until they are perfectly bronzed – shake the tray and stir around halfway through

Notes:

  • These are good in salads or as a substitute for croutons in soup, but my favourite way to eat these is on their own by the handful.
  • These will last in an airtight container for a few days at least, depending on your level of willpower.
