Pear and Feta Muffins with Rosemary

Sweet pears? Yes!

Briny feta? Yes!

Gingery rosemary? Yes!

This may not be the most traditional of mixtures, but these muffins work! If you are a lover of sweet and savoury flavour combos, you need to get in on these.

Ingredients:

  • 2 cups AP flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 cup milk (room temperature, oat milk is fine here too)
  • 1/4 cup unsalted butter, melted
  • 1 egg (room temperature)
  • 1 1/2 cups chopped pears
  • 1/2 cup feta, chopped
  • 1 tsp chopped fresh rosemary

Directions:

  1. Preheat oven to 400 degrees f
  2. Prepare muffin tin (line with cupcake liners, spray with non-stick spray or butter)
  3. Combine flour (2 cups), baking powder (2 tsp), salt (1/2 tsp), sugar (1 tsp) and stir together
  4. Combine milk (1 cup), butter (1/4 cup) and egg (1) and whisk together
  5. Add wet ingredients to dry and stir until barely combined – this batter should be lumpy!
  6. Stir together pears (1 1/2 cups), feta (1/2 cup) and rosemary (1 tsp)
  7. Add pear mixture to batter and stir just enough to combine and no more
  8. Spoon batter into prepared muffin tin
  9. Bake for 25-30 minutes, until golden brown on top
  10. Let cool 5 minutes before removing from tin

Notes:

  • I ended up with 15 muffins from this recipe but it will depend on the size of your tin
  • These freeze really well!
