Cheese buns

While I love unrolling a cinnamon bun and eating it layer by layer, sometimes I’m just in the mood for something that is savoury rather than sweet. And so these cheese buns were born!

They are rolled up like a cinnamon bun but are cheesy right through, from the dough to the delicious whirl of tangy cheese filling.

Hands-on Time: 20 minutes

Total Time: 2 1/2 hours

Ingredients:

Dough

  • 1 cup milk
  • 1/4 cup butter
  • 4 cups all purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp quick rise yeast
  • 1 egg
  • 1/4 cup grated cheddar cheese

Filling

  • 2 tbsp butter
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 cup grated cheddar cheese
  • 1/4 tsp paprika

Other

  • 1 egg white

Directions:

  1. Heat milk (1 cup) and butter (1/4 cup) until butter melts, set aside to cool
  2. While milk mixture is cooling, combine flour (4 cups), sugar (1 tsp), salt (1 tsp) and yeast (1 tsp) in the bowl of a stand mixer fitted with the dough hook
  3. Add egg to dry ingredients and stir to combine
  4. Add the cooled milk mixture
  5. Add the cheese (1/4 cup)
  6. Knead with dough hook (or by hand if it is arm day) for 8-10 minutes
  7. Place dough in a buttered bowl and cover with a cloth, place somewhere warm until doubled in size (roughly 1 hour)
  8. Once dough has risen, place on a floured surface and roll out in a roughly square shape until it is about 1/2 inch thick – this will be a pretty large sheet of dough, try to keep it as square as you can
  9. Melt butter (2 tbsp) and stir in mustard (1 tbsp) and Worcestershire sauce (1 tsp)
  10. Brush the dough with the butter/mustard/Worcestershire sauce, leaving a bit of space at each of the shorter sides of the rectangle
  11. Sprinkle with cheese (1 cup) and paprika (1/4 tsp)
  12. Cut dough into 8 equal strips
  13. Roll each strip into a spiral
  14. Place spirals, swirly side up, in a buttered pan where they will have room to grow
  15. Cover with a towel or plastic wrap and set aside to rise again for 30-40 minutes
  16. Preheat oven to 400 degrees f
  17. Brush buns with egg white and place in oven, bake for 20 minutes (check them after 15)
