The ginger-y kick in this simple syrup will bring your cocktails to the next level. The ginger also adds a spiciness and warmth that is sometimes missing in mocktails. This simple syrup is especially delicious in Ginger Peach Rose Sangria.

Ingredients:
- 1⁄3 – 1⁄2 cup peeled and thinly sliced fresh ginger
- 1 cup white sugar
- 1 cup water
Directions:
- Place all ingredients (1⁄3 – 1⁄2 cup ginger, 1 cup white sugar and 1 cup water) in a saucepan
- Cover and bring to a boil
- Reduce heat and let simmer for 5 minutes
- Turn off the heat and let sit (still covered) for 1 hour
- Remove the ginger
- Let cool and store in the refrigerator
